For a variation, try making these with roasted peppers and cook them on the grill! Serve as an appetizer or light meal with a salad.

Ingredients
- 1 Ontario Tomato, diced
- 1 Ontario Sweet Pepper, seeded and diced)
- 1 Ontario Jalapeño Pepper, seeded and diced
- 1 or 2 cloves Ontario Garlic, minced
- 1 Ontario Green Onions, chopped
- 1 cup (250 ml) shredded Cheddar cheese
- 1 cup (250 ml) crumbled feta cheese
- 6 large flour tortillas
Instructions
In bowl, combine tomato, sweet pepper, jalapeño pepper, garlic, onions, Cheddar cheese and feta cheese; mix well. Arrange tortillas on work surface. Spread half of each with some filling, dividing evenly. Fold in half and press down gently.
Bake on baking sheet in 400° F (200° C) oven for 10 to 15 minutes or until lightly browned and cheese melts. Let cool slightly; cut into wedges.
