Baked Apples with Custard Sauce

Ontario Northern Spy apples are used in this recipe, but other varieties like Golden Delicious and Idared, will also provide delicious results!

Ingredients

  • 4 Ontario Northern Spy Apples
  • 1/4 cup (50 mL) red currant jelly
  • 1/4 cup (50 mL) apple juice
  • 1 cup (250 mL) store-bought or homemade custard

Instructions

Core apples to within 1/2-inch (1 cm) of base.  Spoon 1 tbsp (15 mL) jelly into centre of each apple.  Place apples in shallow baking pan or casserole.  Pour apple juice around apples.  Cover and bake at 375°F (190°C) for 30 minutes.  In small saucepan, heat custard, stirring, over low heat, just until warm.  Pour about 1/4 cup (50 mL) onto each dessert plate; top with apple.  Serve warm.
