An easy topping you might serve on toasts becomes the coating for a wheel of Brie cheese.  Serve with a selection of artisanal breads and crackers for a festive appetizer.

Ingredients

  • 1 round Ontario Brie cheese (about 1 lb/500 g)
  • 3/4 cup (175 mL) Ontario Cherry or Grape Tomatoes, thickly sliced
  • 1 tbsp (15 mL) olive oil                
  • 1 clove garlic, minced
  • 1/2 tsp (2 mL) each dried rosemary and black pepper
  • 1 tsp (5 mL) granulated sugar
  • 1 tbsp (15 mL) slivered fresh basil

Instructions

Leaving side and bottom of cheese round intact, thinly slice off top rind; place round in ovenproof serving dish. Stir together tomatoes, oil, garlic, rosemary and pepper; spoon over cheese. Sprinkle with sugar. (Cheese can be covered and refrigerated for up to 6 hours.)

Bake, uncovered, in 350°F (180°C) oven until warm throughout and starting to ooze, 12 to 15 minutes. (Watch that cheese doesn’t overflow the sides.)  Sprinkle with basil and serve warm.
