Cobb Salad Wrap

This fresh take on a classic features Ontario’s finest produce.  Make filling up to 4 hours in advance and toss with dressing at the last minute.

Ingredients

  • 2 hard-cooked Ontario Eggs, chopped
  • 1 cup (250 mL) chopped Ontario Iceberg or Romaine Lettuce
  • 1 cup (250 mL) shredded Ontario Carrots
  • 1/2 cup (125 mL) chopped Ontario Tomato        
  • 1/2 cup (125 mL) chopped Ontario Sweet Yellow Pepper
  • 3/4 cup (175 mL) shredded Ontario Cheddar cheese
  • 3/4 cup (175 mL) diced Ontario Cooked Ham or Chicken
  • 4 10-inch (25 cm) whole wheat flour tortillas
  • 4 leaves Ontario Romaine Lettuce

Dressing:

  • 2 tbsp (25 mL) mayonnaise
  • 1-1/2 tsp (7 mL) Dijon mustard
  • 1 tbsp (15 mL) rice vinegar
  • Salt and pepper

Instructions

In medium bowl, combine eggs, chopped lettuce, carrots, tomato, yellow pepper, cheese and ham.

Dressing:

In small bowl, combine mayonnaise, mustard, vinegar, and salt and pepper to taste; toss with vegetable mixture.

Place each tortilla on working surface.  Line middle with lettuce leaf; top leaf with one-quarter of the vegetable mixture.  Fold end over filling and roll side over filling.
