Creamy Mushroom Rotini

Fresh Ontario mushrooms are teamed with chunky pasta in this easy, creamy side dish that family and friends alike will enjoy.

Ingredients

  • 4 cups (1 L) rotini pasta
  • 1 tbsp (15 mL) vegetable oil
  • 2 slices Ontario Bacon, chopped
  • 2 cloves Ontario Garlic, minced
  • 1 Ontario Onion, chopped 1
  • 1 lb (500 g) mixed Ontario Mushrooms, sliced (such as Crimini, Button or King Oyster)
  • 1/2 tsp (2 mL) dried thyme leaves
  • 1/4 tsp (1 mL) each salt and pepper
  • 2/3 cup (150 mL) Ontario 10% Cream
  • 1/3 cup (75 mL) chicken broth
  • 1/4 cup (50 mL) dry Ontario VQA White Wine
  • Chopped fresh Ontario Parsley

Instructions

In large pot of boiling salted water, cook pasta according to package directions, until al dente. Drain well and return pasta to warm pot.

Meanwhile, in large nonstick skillet, heat oil over medium heat; add bacon and cook until translucent. Stir in garlic, onion and mushrooms. Cook, stirring occasionally, until mushrooms begin to brown, about 5 minutes.

Increase heat to high and stir in thyme, salt and pepper. Stir in cream, broth and wine; bring to boil. Reduce heat and simmer 1 minute. Add sauce to pasta and toss. Sprinkle each serving with parsley.
