Ham-Filled Cucumber Cups

A light and refreshing appetizer to wake up the taste buds, this is very easy to make. For additional flavour add curry powder if desired.

Ingredients

  • 1/2 cup (125 mL) coarsely chopped ham
  • 3 tbsp (45 mL) light mayonnaise
  • 2 tbsp (25 mL) finely chopped walnuts
  • 1-1/2 tsp (7 mL) Dijon mustard
  • 1/2 tsp (2 mL) curry powder (optional)
  • 1 large Ontario Greenhouse Cucumber
  • Ontario Greenhouse Sweet Yellow Pepper strips (optional)

Instructions

In food processor, finely mince ham and mayonnaise. Remove and stir in walnuts, mustard and curry powder (if using). If desired, score skin of cucumber with tines of fork or zester. Cut cucumber into 1/2- to 3/4-inch (1 to 2 cm) thick slices. With melon baller or small spoon, scoop out core, leaving bottom intact. Fill each cup with approximately 2 tsp (10 mL) filling. If desired, insert 2 short and narrow yellow pepper strips in the ham filling.
