Mashed Potatoes with Cauliflower and Cheddar

The greatest comfort food of all time -- mashed potatoes -- has a wonderful texture and flavour from the addition of cauliflower.

Ingredients

  • 2 lb (1 kg) Ontario Baking Potatoes
  • 4 cloves Ontario Garlic, cut into quarters
  • 2 cups (500 mL) Ontario Cauliflower florets
  • 3/4 cup (175 mL) milk, heated
  • 3 tbsp (50 mL) olive oil
  • 1 tsp (5 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 1 cup (250 mL) shredded Cheddar cheese
  • 1/3 cup (75 mL) chopped Ontario Chives or Green Onions

Instructions

Peel potatoes and cut into 2 inches (5 cm) pieces. In saucepan of boiling salted water, cook potatoes and garlic 10 minutes. Add cauliflower florets and cook another 10 minutes. Drain well.

With potato masher or food mill, mash potatoes, cauliflower and garlic; beat in hot milk, olive oil, salt and pepper. Stir in cheese. Beat in chives. Taste and adjust seasoning if necessary.
