No-Bake Individual Mascarpone Peach Cheesecake

Here’s a fun take on cheesecake – layer the graham base, creamy mascarpone filling and juicy Ontario peaches into small glasses, there’s no need to turn on the oven! For a change, top with other Ontario fruit too, such as blueberries, plums or nectarines.

Ingredients

  • 8 graham crackers

Filling:

  • 8 oz (250 g) Ontario Mascarpone Cheese, at room temperature
  • 4 oz (125 g) block cream cheese, at room temperature
  • 1/3 cup (75 mL) Ontario Liquid Honey
  • 1 tsp (5 mL) vanilla
  • 1/2 cup (125 mL) plain yogurt

Topping:

  • 4 Ontario Peaches, peeled if desired
  • 1 tbsp (15 mL) granulated sugar
  • 2 tsp (10 mL) lemon juice 
  • Ground ginger
     

Instructions

Crush crackers into pea-size pieces. Sprinkle into six 1-cup (250 mL) clear juice glasses. 

Filling: In bowl, beat together mascarpone, cream cheese, honey and vanilla until creamy. Beat in yogurt just till combined. Spoon about 1/3 cup (75 mL) into each glass, keeping sides clean. Refrigerate at least 30 minutes or overnight.
 
Topping: Just before serving, chop peaches into 1/2-inch (1 cm) pieces. Place in bowl, stir in sugar, lemon juice and a generous pinch of ginger. Spoon over mascarpone mixture.
